Caol Ila is the largest distillery on the island of Islay, producing over 2 million liters every year. The vast majority of that goes into Diageo-owned blends like Johnnie Walker Black Label, but there still remains some for eventual release as single malts. While the 12 Year is their single malt cornerstone, the distillery has been releasing a yearly series of unpeated whiskies over the past several years, including the 17 Year. The Caol Ila 15 Year is the first of a reported thirteen releases in the series.

The Dublin Liberties Distillery, as you might be able to tell from the distiller name, is intensely proud of their roots. The Liberties section of Dublin is a famous and storied part of the city with a history too checkered and daring to include here. Everything about the distillery is intricately tied to historical people and places from the Liberties or connecting to Ireland more broadly. Take a tour and you’ll see, trust us. This particular offering is 5 years old and made in collaboration with The Dead Rabbit Grocery & Grog in New York City. This Irish Whiskey bar is in turn named after the Dead Rabbits, a notorious gang of Irish immigrants in the mid-1800s whose rivalry with the Bowery Boys eventually resulted in riots that lasted for days.

This Balvenie 15 year is aged entirely in an ex-Oloroso sherry butt. A butt is a type of cask standard for aging sherry, approximately 475-500 liters. Because of the larger size, there is less surface area per amount of liquid and thus the cask impact is lessened. This may be why this particular offering spends its entire life in the same sherry butt, as opposed to other releases where the sherry cask is used only at the end. Unlike other age statement single malts, which contain a variety of ages with only the youngest listed, this Balvenie is 15 years only, no younger or no older.
