Cleveland Underground Sugar Maple

Back in 2009, navy veteran Tom Lix started experimenting with whiskey. But not in the traditional sense. Cleveland Whiskey seeks to push the envelope about what is possible with whiskey, from how it is produced and aged to the regular taste profiles generally expected in the industry. The Underground series is the distilleries main line, each offering ages in traditional barrels for about six months before going through a proprietary process involving pressure extractions and differing wood combinations using more exotic woods rarely seen as finishing elements. The Cleveland Underground Super Maple is a bourbon finished with sugar maple wood using this transformative method.

Liberty Pole Peated Bourbon

Mingo Creek Craft Distillers was founded in 2017 by Jim and Ellen Hough. The name of their distillery and their whiskey, Liberty Pole, references the Whiskey Rebellion (1791-1794) that has its roots in Western Pennsylvania, where the Liberty Pole was raised by farmers to proclaim their resistance to the whiskey tax levied against them by a fledgling federal government. The rebellion collapsed after federal militia arrived but memory of it still lives in Washington, PA. The distillery offers six core whiskies, including a bourbon cream, and have recently upgraded their still size to increase production. In 2019, they worked with all the other Pennsylvania distilleries to create a special cask strength rye containing whiskey from each distillery for the Whiskey Rebellion Festival. The Liberty Pole Peated Bourbon is double pot distilled and aged 13-18 months.

OOLA Three Shores

OOLA was founded in 2010 by owner and master distiller Kirby Kallas-Lewis in the Capitol Hill neighborhood of Seattle, Washington. They remain small but have won several awards for their various gins and vodkas. They also produce whiskey and their Whiskey Discourse series is designed to combine different whiskies to see how they interact under different influences. Other entries experiment with smoke and cask finishes. OOLA Three Shores is included in our All-Canada World Whisky Day by reason that it is made up of one part OOLA Waitsburg Bourbon, one part unknown scotch from the Highland region, and one part Canadian rye. So part of it’s still Canadian! They are sourced separately but aged together for at least a year in American Oak.
