Talisker 18 Year
Talisker was founded in 1830 by the MacAskill and, after almost two centuries a more than one change of hands, is now owned by spirit conglomorate Diageo. The five stills at the distillery – two wash and three spirit – have a unique feature called swan neck lye pipes. A loop in the pipe moves some vapor into the worm tubs, which condenses some of the alochol therein before it is distilled again. Along with having travel retain bottles and a few No Age Statement expressions, the core of the lineup features five aged offerings, beginning with the Talisker 10. The Talisker 18 Year has long been part of the distillery’s output, along with the 10.
Bowmore 12 Year
Bowmore distillery was founded in 1779 by John P. Simson before ownership passed to the Mutter family, who held it until the distillery closed in 1915 for ten years, before being purchased and passing through various hands during the 20th Century before falling under a subsidiary of the current owner, Bean Suntory. This conglomorate has a vast spirits portfolio that includes, just in Scotland, the Ardmore, Auchentoshan, Bowmore, Glen Garioch, and Laphroaig distilleries, along with producing the McClelland’s single malt range. It has an annual production capacity of two million liters and the waste heat from the distillation process heats a nearby public swimming pool built in a former warehouse. Through a combination of longevity of operations and careful management, Bowmore currently houses the oldest and most diverse set of whiskies on Islay. The Bowmore 12 is the benchmark of the distillery’s core range, and features maturation in both ex-bourbon and ex-sherry casks.
Whiskey Del Bac Dorado
Whiskey Del Bac began production in 2013 in Tuscon, AZ. Founded by Stephen Paul and his daughter Amanda, the distillery is perhaps best known for their mesquite usage. Asking the very valid question of why barley couldn’t be smoked with the American Southwest’s native mesquite tree much like peat is used in Scotland and Ireland, Whiskey Del Bac has found resounding success since releasing their lineup, both in sales and industry awards. They are also a grain-to-glass distillery, using as many native elements in their production as possible. Named after the local Mission San Xavier del Bac, Del Bac Dorado represents everything we love about American craft whiskey, from the local sourcing to the experimentation to the crafting of a spirit unique to a place and people.
